It’s no secret that mint and chocolate go perfectly together. Whether it be in a dessert, an indulgent dark chocolate bar or a smoothie, the flavour combination wins me over every time. There’s been a jar of mint sitting on my window sill for the last several weeks, that I have been regularly replenishing with mint from the garden so I can use it in all my kitchen creations. It’s had its place in juices, a lot of smoothies and smoothie bowls, a few dinners and of course last week’s frozen bar delights. And in fact, it’s been there for so long, just letting me do my thing and use it as I please that it actually sprouted and started to grow. I guess it wants to stay a while. Now I have mint in a jar that is growing new leaves every day, and never runs out. It’s kind of a dream. And it grows so fast.
With this lovely abundance of mint happening, naturally I had to use it in energy bites. With chocolate. Because just like there is always room for a new smoothie recipe, there is always room for a new energy bite recipe. And how could you go wrong with the mint and chocolate flavour? I don’t know why I didn’t think of making these sooner to be honest. These ones are packed with antioxidants from the raw cacao and have a nice added protein addition courtesy of the hemp hearts. You can also replace all or some of the cacao with chocolate hemp protein powder if you need a bit of an additional protein boost. I tend to enjoy these bites as a little after dinner treat, or a mid afternoon energy burst, but if you want them as post-workout refuel, consider adding the extra protein. Whatever you end up doing, I know they’ll leave you happy and satisfied. There is chocolate involved after all. And mint. Enjoy!
Salted Caramel and Mint Chocolate Energy Bites
The perfect mint chocolate combination, with a slight hint of saltiness, these bites are full of protein and antioxidants for a great health boost. Enjoy as a snack or for post-workout refuel.
- 1 1/2 cups dates
- 4 tbsp raw cacao
- 1 handful fresh mint
- 2 tbsp ground flaxseed
- 2 tbsp hemp hearts
- 1 tsp cinnamon
- 1/2-1 tsp salt
- 1 tbsp greens powder
- Add all the ingredients to a food processor or blender. Blend until the dough comes together in a clump, scraping the sides as necessary.
- Remove from the food processor and roll into balls, or roll flat to slice. Refrigerate until firm and enjoy. Store in the fridge in an airtight container.
