This is what happens when peanut butter + banana + cookies come together. I remember loving the peanut butter and banana combo as a kid: mom would give us a banana, a bit of peanut butter in a container and a spoon, and you would just spoon the peanut butter on for each bite. Now I’m more of an almond butter girl, and I just spoon the nut butter straight out of the jar. I need to practice the manners mom taught me and portion it out into a container. Nah, it’s better straight out of the jar.
These cookies though. They’re not your typical cookie, more like a breakfast cookie, loaded with oats, and peanut butter and low in sugar, but still the perfect sweetness due to the natural sweetness of the banana. They were a classic “it’s 11pm, but I want to bake something right now,” kind of whim, and I got up the next morning to find this delightful protein packed cookie when I came back from my run. They are chewy and are a great way to use up ripe bananas if you’re hankering for something other than banana bread. I mean not that you probably ever are. Isn’t banana bread always the answer?
To be honest, ripe bananas don’t last long around here: I snatch them up and put them in the freezer for my ultimate favourite use – smoothie bowls! And do be honest, I just love frozen bananas as a little snack. I chop the banana up into pieces before I freeze it, and I’ve been known to open up the freezer and just eat a piece of it any time of the day. For real though, I’ve been trying to not eat them so randomly, so I can have them to use in baking and bowls, and banana softserve. Because then I get to have enough to make cookies like these! Totally worth the sacrifice.
