Is there anything that can’t be accomplished with a can of chickpeas? I become less and less sure with every meal, snack and dessert. I hope you won’t be surprised to learn that I typically buy 3-4 cans of chickpeas a week and I have a jar of dry chickpeas on my counter, always available. Emergency back up is key. When my sister and I were travelling up the west coast of America, camping, living out of the back of a van and sleeping in our van rooftop room, we didn’t always have the best means of cooking things. Or a heap of groceries. But we sure did have cans of chickpeas. I remember this one part of the trip, where we decided it was a great idea to go to Death Valley in the summer. It was over 50 degrees Celsius in the Valley, and it was all we could do to get to the highest peak to have a bit of cool air and be able to breathe. Obviously in that heat we weren’t doing any cooking, and we sat on the side of this mountain, overlooking Death Valley, each eating a can of chickpeas. Best deal ever.
And here at home, in the comfort of my kitchen, things aren’t that much different. I still open a can or two (or three) every week, and eat a few straight up with a spoon. The rest get used in dinner, delicious fudge or blondies, and of course, in these brownies. How can you go wrong with brownies?
It’s not that I needed another brownie recipe of course. I have one made with beetroot, and one recipe for flourless black bean brownies, but since when are brownies a thing of need? You never really need brownies, but they sure are delicious, and I always want brownies.
And more than that, I always want to play around with different ingredient possibilities in creating brownies. I need to be ready to make brownies with no matter what I have on hand, should the urge strike. And given that I nearly always have chickpeas, it was about time I figured out a way to make brownies out of chickpeas. Everyone’s life goal right?
Well don’t worry, you’ll be happy to know that I’ve done the hard work for you and now you can just buy your can of chickpeas and be set. You’ll also be happy to know that these brownies are gluten free, low in refined sugar and use antioxidant packed cacao powder to bring the delicious chocolate flavour. Sprinkle a little extra over the top and slice these into perfect squares and then try to enjoy them in moderation. But if you can’t take solace in knowing, they’re made from a can of chickpeas.
