I’m a huge fan of beetroots. I love the vibrant colour they produce and the delicious greens on top, and I love the earthy flavour of them when you roast them up with a bit of salt. Each variety tastes unique and is so beautiful when you cut into it, and it’s that time of summer where beets are in their prime.
I also love how versatile they are. You can enjoy beets roasted for dinner, in a smoothie for breakfast, or as a big glass of juice to improve athletic performance courtesy of their nitric oxide.
You can cook the greens, puree the root or leave it whole, and you can also, of course, turn it into dessert.
Beetroot and chocolate are a natural combination. The earthiness of the beets compliments well with the bitterness of the cacao and together, it’s kind of like they were meant to be. And with this chocolate pudding, they were definitely meant to be.
I think you have to make this just to experience how creamy and rich it is. It’s like you are eating really bad for you chocolate pudding. It’s thick and creamy, and has a rich dark chocolate flavour, and is the smoothest pudding I have ever made. And I have made a lot of puddings.
More than that though, let’s not forget that this is made of beetroot. Along with tasting delicious and being incredibly versatile, beetroot is rich in antioxidants and high in fiber, and as mentioned above, is great for athletes because of the nitric oxide, which acts as a vasodilator and opens up your blood vessels more to improve oxygenation.
The raw cacao of the pudding is also incredibly rich in antioxidants, and is a great source of magnesium, important for good sleep, a healthy heart, muscle health and preventing adrenal fatigue.
Plus, as per usual, there’s no added sugar. In fact, this pudding combines a complex carbohydrate, protein and healthy fat to create a balanced food that would be a great snack to fill you up and satisfy your mid-afternoon hungry. Or for dessert. Or for any time really, because it’s so dang good you won’t be able to resist . . . start cooking your beets!
