I’ve been feeling this idea of a superfood, packed with everything cookie for a long time. But not a measly two bite, small cookie. Like a big, full on cookie that is thick and hearty, part scone, part cookie, enough for a breakfast meal kind of thing.
It’s a combination of wanting to make it and try out a recipe and experiment with ingredients, but also just craving something like that to eat, and to have in my house whenever I feel like it.
It’s also a case of wanting cookies because I’ve been running a lot more lately. Mostly because I’ve finished classes and have more time in the morning, but mostly, of course, because I just love it. And with increased mileage, and increased training, comes the need for increased fuel.
Despite how many times I have trained for marathons and long races, and increased my mileage, I’ve never really experienced huge changes in my hunger levels. Until now. For whatever reason, over these last few weeks, with the increase in distance, has been an increase in hunger.
It has resulted in extra homemade nut butter, vibrant bursting smoothie bowls, lots of turmeric teas and green smoothies, and of course these cookies.
These were born out of my desire to make the cookies, and also my midnight baking fest at the end of a 100km week, and an incorrigible level of hunger as a result. I’m not disappointed with the cookies or the miles, so I think I’ll keep going with both!
