Certain foods will be timeless classics, that never get old, never stop being liked, or never stop being something we crave, or at least are regularly satisfied by.
You could fit your favourite comfort food dinners in here, and your favourite birthday cake that you ask for every year. This is where you put your meals that you want when you’ve had a really bad day, or the treats you crave when you are stressed and just need that hit of food that does make you happy, thank you very much. And yes, I will eat it slightly in excess.
And it is in this category, as one of these types of foods, where we find lemon bars. I think we all have our own version of lemon bars that become our favourite. Maybe it’s those ones with the lemon jelly that your grandmother used to make that were so yellow, they clearly had food dye (although you didn’t realize it at the time!).
Or maybe it is the one that is mostly like a cake, dripping in sweet, sugary lemon sauce and the perfect balance of tart and sweet and just melts in your mouth from soaking in all that sugar.
Still not convinced? Then it must be these lemon bars. They have a simple raw, cashew crust and a coconut lemon filling that is tart, but with the perfect balance of sweetness. They are raw and vegan, with no refined sugar or processed ingredients, and of course, no food dye.
And maybe it’s because they are made with lemon that makes them seem like a classic, or because they are simple squares that seem like they would be perfect with tea or for a simple dessert. Or maybe it’s because I am just so obsessed with living here in Australia where they have lemon trees, overloaded with lemons that you just find in your backyard, but whatever the case, these bars are really working well for me.
These bars are the delicious lemon classic, the “try something new,” and, the comforting, “yes, I’ll eat several of them in one sitting, thank you very much,” bar, all in one. And I definitely ate more than one. And not spread over a few days. And then I picked some fresh lemons and made them all over again. Yes please!
