I don’t think there are many people who say no to pizza. Well actually, let me talk about that: I would say no to pizza if it weren’t a good base, with good toppings, greens and heaps of flavour. I would say no if it wasn’t loaded with fun ingredients, had bold, unique flavours and was just a basic, repeat, run of the mill type of pizza that everybody remakes time and time again.
But I wouldn’t say no to pizza that was a little bit different and exciting. A little bit edgy, with a flavour and topping combination you might not think of, but once piled on top, you couldn’t not think of. And I certainly wouldn’t say no to pizza that had both pumpkin and tahini in one place.
And in this case, we’re acutally talking about black tahini. That beautiful, bold, black as stuff that is drizzled all over the top of these cute, personalized pizzas. To be honest, it doesn’t really taste that much different than traditional tahini, and is still loaded with the same healthy fats and calcium levels, but the vibrancy and blackness of that colour is something else.
Whenever I have foods that are a really great colour, my mind immediately goes to photos and food photography and food styling, and how cool something would look against certain backgrounds or with certain complimentary ingredients. It’s how this happened, why I sometimes end up making more mess with the food and playing with it more than eating it, and it’s why there is never enough time for all the photos.
But it’s also why I get to com up with recipes like this delicious pizza. A pizza where we marry the bold colour of black tahini against the contrast of the beautiful green avocado and spinach, and combine the delicious flavours of lemon and sweet, sweet squash with the creamy, nutiness of tahini. It’s why this all ends up on top of a delicious base that is soft and fresh, and a little crunchy on the outside and why we get to eat this all together in one place on one thing and call it pizza.
