I have a confession: these are the easiest gingerbread cookies you will ever make. That translates to these are the best gingerbread cookies to make to minimize the amount of time it takes to get the gingerbread cookie into your mouth. Because that’s the main point of cookies right? And to taste good. They always have to taste good.
And these cookies check both requirements.
These are the cookies you make when you find out with little to no notice that someone is coming over for dinner or for an afternoon visit and you want to have some dessert or cookie to go with tea. These are the cookies you make when you have an incorrigible craving for gingerbread that just can’t be satisfied with anything except for the real deal gingerbread thing.
These are the cookies you make when it is the start of gingerbread season and you just can’t wait to get into all things gingerbread all the time. For the next several months, if I know myself.
Because these gingerbread cookies are not only quick and simple, but they are completely raw, vegan, gluten free and contain no refined sugar. The classic version of gingerbread is loaded with butter and brown sugar, and while the vegan ones of course are better with a butter alternative, if you’re going for the ultimate healthy gingerbread, these ones are it. And why wouldn’t you want to do healthy gingerbread.
After all, it means you can eat it more often in larger quantities. Maybe even for breakfast. And snack. I’ll even come back from a run and pop in one of these little gems. They’re a great post workout refuel, because the combine protein, complex carbohydrate and healthy fats all in one. It’s not quite the same to have gingerbread and celebrate the season without snow and in the heat instead of the cold, but the gingerbread makes it much more bearable. And cookies in general.
