I have a love hate relationship with tofu. Not a hate as in I don’t like it, but a hate as in sometimes it’s not at its best. Like those times when it’s a bit bland, or too soft, or goes way crumblier than I want it to, when, really I was intending for it to be in nice firm pieces that would be coated in sticky ginger miso sauce. Now I just want ginger miso stir fry.
I love tofu the most when it’s that perfect happy medium between crispy and chewy. Firm enough that you can hold it in your hand and dip it into delicious dips and spreads, like hummus or tangy yogurt dip, but chewy enough that the entire insides aren’t cooked out. Tofu is like sweet potato: when you cook it for too long, the inside just all disappears.
I’ve spent a lot of time unintentionally trying to get tofu just right. Unintentionally as in I would cook it and it wouldn’t turn out how I wanted and then I would say, “oh well. I guess that’s not how to cook it. Next time.”
Really, I think these mediocre tofu results are at the root of tofu’s bad rap. Yes, some people choose not to eat tofu because it’s soy, but in reality, non GMO soy, in moderate amounts is actually quite a good option for individuals who suffer from estrogen dominance or who have issues with PMS. Regardless, if you have been turned off tofu more because of your bad experiences with texture, flavour and overall palatability, I think you need to rethink your whole tofu plans.
Starting with this recipe. All that, non-dedicated tofu cooking and unintentional trial and error and messed up batches that I ate anyway (and fed to the boy with a smile to convince him that they were delicious), has led to finally figuring this out. And it’s so easy!
You guys: once you cook tofu like this, you’ll never want it any other way. In fact, you may even start to crave it and want it all the time. Don’t worry: it’s totally normal. In fact as I type this, all I want for dinner now is crispy tofu.
And whether you use them as dippers with dipping sauce, enjoy them as part of a Buddha bowl with creamy vegan cheese sauce (my fave), or toss them into that stir fry we talked about above, this is tofu at its finest.
Don’t delay. Get out the pan. Turn on the oven. We’re having tofu for dinner!
