Over the last few weeks, I literally can’t get enough of this new, amazing superfood snack that I’ve found. In fact, as I type this right now, I’m craving the little chewy morsels and wish I had a bag nearby. I think I should just start carrying them with me every where I go. I’m obsessed.
They’re this perfect combination of crunchy and chewy, and with their slightly sweet flavour, they make the perfect snack, but are also great for if you’re just after a little after dinner dessert, or some pre-workout fuel. Or some post workout refuel, or some I-just-am-so-hungry-and-could-eat-anything satisfaction.
They’re being touted as one of the great superfoods of 2017, but I totally found them in 2016. I’ve just been too immersed in their deliciousness to share them before this. And patiently waiting for my next order courtesy of Terra Firma Foods. Not that I ate them all the first time around or anything . .
Introducing tiger nuts. If you haven’t heard of them, you’re in for a real treat. Not actually nuts at all, these tiny root vegetables are gluten free, packed with fiber and an incredible source of iron. They have a natural sweetness and are a great source of resistant starch. Resistant starch is a form of carbohydrate that is not immediately digested when consumed. Instead it remains in the gut, where it acts as food for the bacteria, allowing us to produce and maintain healthy gut bacteria.
But it gets better. Tiger nuts also contain Oleic acid, and are a source of protein. Oleic acid, one of the healthy fats found in olive oil, is important for brain health and concentration, improves skin complexion and circulation and supports a healthy digestive system.
Still not convinced? Well they even contain magnesium! Magnesium, the ultimate mineral for supporting your adrenals and aiding your body when it is regularly under stress (physical or emotional), and for improving energy and reducing muscle cramping.
Can you see where this is going? Not only are these things delicious, but they are a runner’s dream! Iron, protein, magnesium, filling fiber and prebiotics. I’m hooked. Literally, can’t get enough, crave these all the time hooked.
And so, in my tiger nut obsession, I’ve harnessed their amazing health benefits and combined it with liver supporting dandelion root to create Tiger Nut and Dandelion Granola Bars.
Now don’t wrinkle your nose and run away. It may sound like a weird combination, but the sweetness of the tiger nut flour compliments the earthiness of the dandelion root perfectly, and combined with the dates and nuts, these granola bars just may be my new fave.
And it’s a good thing, because they may just be the healthiest as well!
Whether you get the flour, peeled nuts, or unpeeled nuts and whether you eat them straight out of the bag, soak them to make them even crunchier or turn them into granola bars, I can assure you these will have a great place in your snack cupboard. Maybe even front and centre. That’s where mine are!
