Given that my favourite color is green, it only makes sense, that on this day of all things green, I would be doing a little bit of celebrating. Or at the very least, a little bit of all things green when it comes to recipes.
I kind of feel like I am backtracking – I had Easter two days ago, and now I’m back with St. Patrick’s Day. But it was really important for you to get those little nests, because aren’t they just the cutest things? I can’t even contain myself, let alone try to hide them from you any longer. To be honest, I’m impressed that there are some left in my freezer!
There’s a lot of green that happens in my life. There are heaps of green smoothies and smoothie bowls, I’m all over the matcha, and I’m always trying to add more green to every meal. In fact, one of my favourite things is green sushi bowls: crispy tofu, broccoli, brussel sprouts, alfalfa sprouts, nori sheets, kale salad with avocado, and a green miso tahini sauce. I want that right now.
But instead, right now, we’re going to talk about all the delicious green things you can make for St. Paddy’s Day. You could make that bowl of course, but maybe you are feeling more like some green sweets? Something more dessert like that you can share with everyone when they come over to remind you that it is green day and you should be having everything green in your life? Or perhaps a nice little non-alcoholic green beverage to sip all on your own as you celebrate a cleaner St. Patrick’s Day, and not one that is ridden with beer like most. Although I’m not opposed to a Guinness in true celebrating the Irish holiday form.
In all honesty, I guess it’s fair to say that while this list contains a good number of treats, it definitely errs more on the side of constituting a healthy St. Patrick’s Day than a splurging one. But it’s all really tasty, and even though it’s healthy, you’d never know. So take your pick, and enjoy all your green celebrating . . . and don’t worry, I’ll still be splurging on the Guinness!
